In 2022, after several lots achieved recognition in the Cup of Excellence, El Morito formalized its structure as a producers’ association. This marked a turning point: strengthening collaboration, increasing shared knowledge, and expanding their capacity to export directly.

Recent investments include new fermentation tanks, raised drying beds in well-ventilated solar tents, and a greenhouse nursery to support long-term farm resilience.

The area

The region’s altitude, climate, and slow cherry maturation contribute to dense beans and structured sweetness. Cajamarca has increasingly become known for high-quality specialty production, supported by producers investing in improved processing infrastructure.
